High mountain green tea, known for its unique fragrance, is one of the most popular green teas. It is mainly produced in the high mountainous areas of northeastern Wuyuan and is crafted with meticulous care. The finished tea leaves are characterized by visible white hairs and distinct stems. As a representative of Wuyuan high mountain green tea, it features a lasting, delicate aroma, and a rich, refreshing taste.

The picking standard for high mountain green tea is one bud with two leaves. Wuyuan green tea is very tender, with most of it being pre-Qingming tea. After the fresh tea leaves withered, they undergo fixation, a crucial process for Wuyuan green tea, which is a pan-fired tea. This step involves using high temperatures to destroy and inactivate the oxidase activity in fresh tea leaves, inhibiting the enzymatic oxidation of tea polyphenols and other compounds in the fresh leaves. It also removes some moisture, making the leaves softer and easier to roll, while eliminating the grassy smell and promoting the development of a good aroma.
